Travelin' Autumn Escape
This year, the Travelin’ We Walk Weekend was centered around a very special trip: the Travelin’ Autumn Escape! We invited a group of twenty cheerful Travelers to the magical estate of Quadenoord, where we spent a day and night fully immersed in the great outdoors. Sleeping in tipis, dining in the forest restaurant, enjoying a campfire with marshmallows and hot chocolate—autumn was in full swing!
Edwin Flores of Casa Foresta took us on an amazing foraging walk and taught us the tricks of the trade! Among our finds were a large cauliflower fungus, tawny grisettes, and beefsteak fungus!
After the walk, the chefs from Restaurant Zeven welcomed us into the forest kitchen to prepare a feast together from our foraged finds. We made herb butter, focaccia, mushroom dip, and many other delicious treats. What a treat it was!
The dinner, also prepared by Restaurant Zeven, consisted entirely of local ingredients. Think of game from the Veluwe, cheeses from Gelderland, and vegetables straight from the farmer.
